Creamy Yukon Gold potato salad bursting with flavor, made by mixing warm peeled potatoes with ingredients.
Ingredients:
  • 2 pounds Yukon Gold potatoes, scrubbed
  • 2 teaspoons salt
  • 4 hard-boiled eggs, chopped
  • 1 cup diced sweet onion
  • 1.25 cups mayonnaise
  • 2 teaspoons celery salt
  • ground black pepper to taste
Instructions:
  • In a large pot, submerge potatoes in water, season with salt, and bring to a boil. Simmer over medium-low heat until potatoes are easily pierced with a fork, approximately 30 minutes. Drain and let cool until warm to the touch.
  • Peel and chop potatoes. Combine with eggs and onion in a bowl. Stir in mayonnaise, celery salt, and pepper until mixed. Chill for about 1 hour to enhance flavors. Serve cold.
