Create delicious Scottish shortbread from scratch with this easy step-by-step recipe.
Ingredients:
  • 250g butter, softened
  • 4.40 gm vanilla essence
  • 107.50 gm caster sugar
  • 500.00 ml plain flour, sifted
  • 42.90 gm rice flour, sifted
Instructions:
  • - Preheat your oven to 150°C. - Grease two 4cm-deep, 20cm round cake pans and line the bases with baking paper. - In a small bowl, use an electric mixer to beat butter, vanilla, and 1/3 cup of sugar until light and fluffy. - Transfer the mixture to a large bowl and stir in the flours.
  • Transfer dough onto a floured surface and knead until it forms a cohesive dough. Divide the dough in half. Roll out 1 half between 2 sheets of baking paper to create a 20cm round shape. Gently place the round into the prepared pan and level the top using the back of a spoon. Score the surface into 8 portions without cutting all the way through. Use a fork to create a decorative edge on the dough. Brush with a little water and sprinkle half of the remaining sugar. Repeat with the second half of the dough and remaining sugar.
  • Bake for 35 to 40 minutes until just firm, then remove from the oven. Carefully re-cut portions with a small knife without cutting all the way through. Allow shortbread to cool in pans before serving.
