Buttery shortbread cookies made with a mix of flours, perfect for any celebration!
Ingredients:
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 0.33333334326744 cup white rice flour
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Prepare a baking sheet with greaseproof (parchment) paper. In a medium mixing bowl, sift together the flour and rice flour, then add the sugar and mix well.
  • Dice the butter and work it into the flour using your fingers until the mixture starts to come together. Then, knead it into a soft dough.
  • Shape the dough into an 8-inch round and place it on a baking sheet. Use a fork to prick the top and create tine marks along the edge. Score the top with wedge marks to indicate where it will break when cooled.
  • Bake for 45 minutes or until pale golden. Sprinkle with a touch of superfine sugar and let cool on the baking sheet. Cut into wedges and store in an airtight tin for weeks of enjoyment.
