Indulge in decadent buttery shortbread topped with a chocolate drizzle.
Ingredients:
Meltedbutter, to grease
225g (1 1/2 cups) plain flour
120g (2/3 cup) rice flour
100g (1/2 cup) caster sugar
Pinch of salt
225g cold butter, coarsely chopped
Plain flour, extra, to dust
Meltedwhite chocolate, to decorate
Instructions:
Preheat your oven to 150C. Prepare 2 large baking trays by generously brushing them with melted butter.
In a large bowl, mix the flour, rice flour, sugar, and salt. Use your fingertips to blend in the butter until the mixture resembles fine breadcrumbs. Transfer the mixture to a lightly floured surface and knead until smooth.
Roll out the dough to a 1cm thickness, then use a 5cm-diameter star-shaped pastry cutter to cut out shapes. Place the shapes on prepared trays and bake in the oven for 45 minutes, swapping trays halfway through. Once the shortbreads start to change color, cool them on trays for 1 hour before drizzling with chocolate to decorate.
