Spicy Southern shrimp and corn maque choux, a quick and satisfying dish using fresh, vibrant vegetables. Ready in under 30 minutes.
Ingredients:
  • 4 tablespoons butter, divided
  • 0.5 medium red bell pepper, diced
  • 0.5 medium green bell pepper, diced
  • 1 medium shallot, minced
  • 1 green onion, sliced
  • 2 cups sweet corn, fresh or frozen
  • 0.5 medium zucchini, diced
  • 2 tablespoons water
  • 4 teaspoons Cajun seasoning, divided
  • 0.33333334326744 cup half and half
  • 20 jumbo shrimp, peeled, deveined, and tails removed
Instructions:
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Add bell peppers, shallot, and green onion and season with salt and pepper. Sauté until vegetables are soft, around 5 minutes.
  • Combine corn, zucchini, water, and 2 teaspoons Cajun seasoning in the skillet. Sauté until zucchini is tender, approximately 2 minutes. Finish by mixing in the half-and-half and removing from heat.
  • Season the shrimp with the remaining 2 teaspoons of Cajun seasoning.
  • In a separate skillet, melt the remaining 2 tablespoons of butter. Cook shrimp in four batches until they are curled, pink, and thoroughly cooked, which should take around 2 to 4 minutes per batch. Be careful not to overcook them.
  • Plate the vibrant corn mixture evenly among four plates and generously crown each serving with 5 succulent cooked shrimp. Enjoy promptly.
