Silverbeet and mushroom pie

Savory mushroom-filled vegetarian pie with hearty texture.
Ingredients:
  • 2 onions, finely sliced
  • 3 cloves garlic, chopped
  • 500g mushroom cups, thickly sliced
  • 1 bunch silverbeet, roughly chopped
  • Pinch nutmeg
  • 4 eggs
  • 300ml lite thickened cream
  • 125.00 ml grated reduced fat Swiss cheese
Instructions:
  • 1. Preheat the oven to 180°C. 2. In a large saucepan over medium heat, saute the onion and garlic in olive oil until softened, about 5 minutes. 3. Add the mushrooms and continue to saute for 2 more minutes. 4. Stir in the silverbeet, nutmeg, and season to taste. 5. Cover and cook until the silverbeet wilts. 6. Remove from heat, mix the silverbeet with the mushrooms, and drain any excess moisture.
  • Spread the silverbeet mixture into a spacious 6-cup baking dish. Combine eggs, cream, and seasonings, then mix in grated cheese. Gently pour the egg mixture over the silverbeet, swirling it with a fork to combine.
  • Bake the pie for 40 minutes, or until it turns a beautiful golden color and is fully set. Let it cool slightly before cutting into slices.
