Silverbeet with lemon and walnuts

Ingredients:
  • 1 bunch silverbeet
  • 9.20 gm olive oil
  • 1 garlic clove, finely chopped
  • 37.95 gm chopped walnuts
  • 1 tsp finely grated lemon rind
  • 21.00 gm lemon juice
Instructions:
  • Separate the silverbeet leaves from the stems (see note), then roughly chop the leaves.
  • In a large deep frying pan over medium heat, heat oil. Add garlic and walnuts, cook for 3 to 4 minutes until walnuts are toasted. Add silverbeet and cook for 2 to 3 minutes until just wilted. Stir in lemon rind, lemon juice, salt, and pepper. Toss to combine before serving.
