Kid-friendly Easter treat: Roll out marzipan with children for a fun activity. Adult supervision needed for blow-torching.
Ingredients:
  • 175 g butter
  • 175 g soft light brown sugar
  • 1 lemon
  • 1 orange
  • 175 g flour
  • 2 teaspoons baking powder
  • 50 g ground almonds
  • ½ teaspoon each ground cinnamon, ginger and nutmeg
  • 3 large free-range eggs
  • 1 tablespoon milk
  • 150 g raisins
  • 100 g currants or sultanas
  • 100 g glacé cherries, sour cherries or dried cranberries
  • 100 g mixed peel
  • 3 tablespoons apricot jam
  • icing sugar for dusting
  • 350 g marzipan
  • cinnamon for dusting (optional)
Instructions:
  • - Preheat the oven to 150°C/300°F/gas 2. Grease and double line a 20cm cake tin. - Cream butter and sugar, then mix in lemon and orange zest. - In another bowl, combine flour, baking powder, almonds, spices, and salt. - Add 1 egg and 1 tbsp dry mix to butter mixture, repeat with remaining eggs and dry mix. - Gently fold in milk, fruits, and peel. - Pour batter into tin and bake for 1½ to 1¾ hours. - Check with a skewer, then cool on a wire rack. - Warm apricot jam until thin. - Roll marzipan, place on cake, and decorate with balls. - Brush with jam and caramelize if desired.
