Simple Cauliflower Soup

Creamy vegetable soup with sautéed potatoes, cauliflower, and onions in a rich milk and veggie broth.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 onion, chopped
  • 1 head cauliflower, broken into small florets
  • 1 potato, peeled and diced
  • 2 cups vegetable stock
  • 2 cups milk
  • salt and pepper to taste
Instructions:
  • In a large pot over medium heat, melt the butter until it's sizzling. Saute the onion in the flavorful butter for 5 minutes. Add the cauliflower and potato to the mix and saute for an additional 5 minutes until tender and fragrant.
  • - Pour the stock into the pot and bring it to a boil. Simmer on low for 20 minutes until the vegetables are tender. - Stir in the milk until well blended. - Season with salt and pepper to taste.
