Simple Chicken and White Bean Soup

Spicy white bean and chicken soup with Mexican flair, featuring green chiles and cayenne for a flavorful kick.
Ingredients:
  • 1 onion, chopped
  • 2 teaspoons chopped garlic
  • 4 skinless, boneless chicken breast, chopped
  • 2 (14.5 ounce) cans great Northern beans
  • 20 ounces chicken broth
  • 1 (4 ounce) can chopped green chiles (such as Old El Paso®)
  • 12 sprigs cilantro, chopped
  • 2 teaspoons salt
  • 0.5 teaspoon cayenne pepper
Instructions:
  • In a large pot over medium-high heat, warm up olive oil. Sauté onion and garlic until softened, approximately 5 minutes. Move them to a small bowl.
  • Cook the chicken in the flavorful remaining oil until golden brown, about 5 to 7 minutes. Add back the onion mixture to the pot along with the beans, broth, chiles, cilantro, salt, and cayenne pepper.
  • Bring the soup to a vigorous boil before lowering the heat to medium-low and simmer until the beans are very tender and the chicken is fully cooked, approximately 20 minutes.
