Simple pork pies

Effortless cheat's pork pies for a quick and delicious treat without the fuss.
Ingredients:
  • 500g good-quality pork sausages
  • 1 apple, grated
  • 20.00 ml chopped flat-leaf parsley
  • Pinch grated nutmeg
  • 340g plain flour
  • 80g unsalted butter
  • 1 egg, beaten, plus 1 egg yolk to glaze
  • Tomato chutney or sauce, to serve
Instructions:
  • Heat your oven to 200°C and generously grease a 6-hole muffin pan.
  • Remove the sausage meat from the casings and place it in a bowl. Add the apple, parsley, nutmeg, salt, and pepper. Mix thoroughly to combine all ingredients.
  • In a bowl, sift flour and add 1 teaspoon of salt. Create a well in the center.
  • Combine butter and water in a pan over gentle heat until melted, then mix into the flour.
  • Combine the beaten egg with the mixture using your hands until a smooth ball forms.
  • Roll out the dough on a lightly floured surface, then cut out 6 rounds using a 10cm pastry cutter. Gently place the rounds into the muffin pan, allowing them to slightly overhang the edges.
  • Place a portion of the sausage mixture into each muffin hole. Combine the remaining pastry into a ball and roll it out again. Cut out 6 lids using a 7cm cutter. Dampen the overhanging pastry in the muffin holes with a bit of water, place the lids on top of the filling, fold the excess pastry up around the edges, and press to seal. Roll any leftover pastry into thin strips and use them to create a decorative seal around the edge of each pie.
  • Apply a shiny coat of beaten egg yolk onto the pies, then bake until beautifully golden, about 35 minutes.
  • Allow the dish to cool slightly in the pan before removing. Once cool, pack it until completely cooled. Enjoy with a side of tomato chutney or sauce.
