Spicy salsa chicken wrap with creamy mayo-honey sauce and cucumber for a unique lunch upgrade.
Ingredients:
  • 0.5 cup mayonnaise
  • 0.25 cup finely chopped seedless cucumber
  • 1 tablespoon honey
  • 0.5 teaspoon cayenne pepper
  • ground black pepper to taste
  • 2 tablespoons olive oil
  • 1.5 pounds skinless, boneless chicken breast halves - cut into thin strips
  • 1 cup thick and chunky salsa
  • 8 (10 inch) flour tortillas
  • 1 (10 ounce) bag baby spinach leaves
Instructions:
  • Prepare the sauce by combining mayonnaise, cucumber, honey, cayenne pepper, and black pepper in a bowl. Mix until smooth, then refrigerate until ready to use.
  • Prepare the wraps by warming olive oil in a skillet over medium-high heat. Sauté the chicken strips until they become golden and cooked through, which should take around 8 minutes. Next, add salsa, honey, and cayenne pepper to the skillet. Lower the heat to medium-low and let the flavors meld together as you simmer the mixture for approximately 5 minutes, stirring occasionally.
  • Place 4 tortillas in a stack in the microwave and heat for 20-30 seconds until warm and pliable. Repeat for remaining tortillas.
  • Spread a generous layer of 1 tablespoon mayonnaise-cucumber sauce on each tortilla, add a handful of spinach, then top with about 1/2 cup of the flavorful chicken mixture.
  • Fold the bottom of each tortilla up 2 inches, then roll tightly from the right side. Once rolled halfway, fold the top down to enclose the filling, then continue rolling into a compact cylinder.
