Sesame soy oven-baked chicken with a crunchy wheat germ coating.
Ingredients:
  • 0.5 cup soy sauce
  • 0.5 cup dry sherry
  • 2 tablespoons minced garlic
  • 2 tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1 whole chicken, cut into pieces
  • cooking spray
  • 1 cup wheat germ
  • 0.5 cup Italian seasoned bread crumbs
  • 0.25 cup sesame seeds
  • 0.25 cup dried parsley
  • 0.75 teaspoon ground black pepper
  • 1 teaspoon paprika
Instructions:
  • Combine soy sauce, sherry, garlic, brown sugar, and ginger in a bowl, then transfer the mixture to a large resealable plastic bag. Add the chicken, ensuring it's coated well with the marinade, remove any excess air, and seal the bag. Refrigerate for a minimum of 2 hours to marinate.
  • Preheat oven to 350 degrees F (175 degrees C) and generously coat a baking rack with cooking spray before placing it on a baking sheet.
  • Take out the chicken from the marinade, allowing any excess to drip off. Dispose of the leftover marinade.
  • Combine wheat germ, bread crumbs, sesame seeds, parsley, black pepper, and paprika in a large resealable plastic bag. Add chicken, shake to coat, then transfer to the baking rack.
  • Roast in the oven until the meat is no longer pink by the bone and the juices are clear, approximately 1 hour. Use an instant-read thermometer in the thickest part of a thigh (without touching the bone) to confirm a temperature of at least 160 degrees F (70 degrees C).
