Sinaloa-Style Shrimp Ceviche: zesty blend of shrimp, chiles, tomato, onion, and lime juice.
Ingredients:
  • 3 pounds raw shrimp - peeled, deveined, and cut into small pieces
  • 0.5 white onion, finely chopped
  • 14 limes, juiced, divided
  • 1 serrano chile pepper
  • 1 pound imitation crabmeat, shredded
  • 3 tomatoes, seeded and finely chopped
  • 1 cucumber, seeded and finely chopped
  • 0.5 red onion, thinly sliced
  • 4 jalapeno peppers, sliced
  • 1 bunch cilantro, chopped
  • 0.5 cup tomato and clam juice cocktail (such as Clamato®)
  • salt and ground black pepper to taste
Instructions:
  • In a large bowl, mix shrimp, white onion, and juice of 7 limes. Cover with plastic wrap and chill until shrimp is opaque, approximately 12 hours. Discard any accumulated juices before serving.
  • Combine the juice from the 7 remaining limes with the serrano chile pepper and pour the mixture into a large bowl.
  • In a bowl, mix together shrimp, onion, crabmeat, tomatoes, cucumber, red onion, jalapeno peppers, and cilantro. Stir in tomato and clam juice cocktail. Season with salt and black pepper.
