Sinaloa-Style Ceviche

Sinaloa-Style Shrimp Ceviche: zesty blend of shrimp, chiles, tomato, onion, and lime juice.
Ingredients:
3pounds raw shrimp - peeled, deveined, and cut into small pieces
0.5white onion, finely chopped
14limes, juiced, divided
1serrano chile pepper
1poundimitation crabmeat, shredded
3tomatoes, seeded and finely chopped
1cucumber, seeded and finely chopped
0.5red onion, thinly sliced
4jalapeno peppers, sliced
1bunchcilantro, chopped
0.5 cuptomato and clam juice cocktail (such as Clamato®)
salt and ground black pepper to taste
Instructions:
In a large bowl, mix shrimp, white onion, and juice of 7 limes. Cover with plastic wrap and chill until shrimp is opaque, approximately 12 hours. Discard any accumulated juices before serving.
Combine the juice from the 7 remaining limes with the serrano chile pepper and pour the mixture into a large bowl.
In a bowl, mix together shrimp, onion, crabmeat, tomatoes, cucumber, red onion, jalapeno peppers, and cilantro. Stir in tomato and clam juice cocktail. Season with salt and black pepper.
