Satisfy your noodle cravings at home with this easy recipe!
Ingredients:
6dried shiitake mushrooms (see note)
40.00 ml dried shrimp (see note)
250g thin fresh egg noodles
60ml chicken stock
4.00 gm brown sugar
42.00 gm soy sauce
36.80 gm sunflower oil
1onion, thinly sliced
2garliccloves, finely chopped
5.00 gm mild curry powder
200g peeledgreen prawns
20.00 ml gratedfresh ginger
Slicedchilli, to serve
Spring onion, to serve
Coriander, to serve
Spring rolls (see related recipe), to serve
Instructions:
1. Place dried shiitakes and shrimp in 1/2 cup (125ml) boiling water. Allow them to soak for 30 minutes. Strain, keeping the liquid. Slice the shiitakes.
2. Cook noodles following package directions. Drain and rinse with cold water.
3. Mix stock, sugar, and soy sauce together.
In a hot wok, sauté onion, garlic, shiitake mushrooms, and shrimp for 2 minutes. Next, add curry, prawns, and ginger, stir-fry for 1 minute. Toss in noodles, sauces, and soaking liquid, stir-fry for another minute. Serve with chili, spring onion, coriander, and spring rolls.
