Sizzle up a one-pot wonder with flavorful chicken thighs and green beans. Easy to make, perfect for the whole family, and sure to become a weekly favorite.
Ingredients:
  • 2 teaspoons chopped garlic
  • 4 bone-in skin-on chicken thighs (about 1 1/2 lb total)
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 to 2 cups Progresso™ reduced sodium chicken broth (from 32-oz carton)
  • 1 package (8 oz) baby bella mushrooms, sliced
  • 1 package (12 oz) fresh green beans (in steam bag)
  • 4 oz cream cheese, cubed (from 8-oz package)
  • 1/4 teaspoon crushed red pepper flakes
  • Chopped fresh chives, if desired
Instructions:
  • Season chicken with aromatic thyme, salt, and pepper. Sear chicken skin side down in a nonstick skillet over medium-high heat until achieving a perfect deep golden brown color. Flip chicken, reduce heat to medium, and cook until the other side matches the same beautiful golden brown hue. Finally, remove chicken from skillet and dispose of the drippings.
  • Pour 1 1/2 cups of broth into the skillet and place the chicken back in. Bring the broth to a simmer and cook over medium heat for 15 to 20 minutes until the chicken juices run clear (at least 165°F). Remove from heat, transfer chicken to a plate, cover, and keep warm. Pour the pan juices into a 1-cup measuring cup. Add extra chicken broth to reach 3/4 cup; set aside.
  • Heat olive oil in skillet over medium heat. Add mushrooms and cook, stirring occasionally, until tender and browned, about 3 to 5 minutes. Stir in garlic and cook for about 30 seconds until fragrant.
  • Microwave green beans according to package instructions for optimal tenderness; then, set aside.
  • Pour in the reserved 3/4 cup of chicken broth mixture, cream cheese, and pepper flakes. Simmer over medium heat for 4 to 6 minutes, stirring often, until the cheese is melted and the sauce begins to thicken. Add the green beans, making sure they are coated in the sauce. Put the chicken back in the skillet and you're ready to serve.
  • Plate the chicken alongside the flavorful pan sauce and green bean mixture. Sprinkle with fresh chives for a final touch of elegance.
