Indulge in rich, chocolate-filled zucchini bread, a scrumptious treat for using up fresh garden zucchini.
Ingredients:
  • 1 1/2 cups shredded zucchini
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs, beaten
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup miniature semisweet chocolate chips
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 3 tablespoons miniature semisweet chocolate chips
  • 3 tablespoons cold unsalted butter, cut into cubes
Instructions:
  • Preheat your oven to 350°F and lightly coat a 9- to 10-inch cast-iron skillet with cooking spray.
  • Combine zucchini, 3/4 cup sugar, oil, vanilla, and eggs in a medium bowl.
  • In a large bowl, combine 1 1/2 cups flour, baking soda, baking powder, salt, cinnamon, and 1 cup miniature chocolate chips. Gently fold in the zucchini mixture until just combined. Transfer the mixture to a skillet.
  • Combine the Streusel ingredients in a small bowl, mixing in butter until coarse crumbs form. Sprinkle over the zucchini batter in the skillet.
  • Bake for around 30 minutes, or until a toothpick inserted in the center comes out clean. Then, remove from the oven and allow it to cool before serving.
