Skinny Grilled Chicken Sandwiches with Lime Dressing

Healthy grilled chicken sandwich with zucchini slices for added flavor and nutrition.
Ingredients:
  • 1/4 cup fat-free mayonnaise or salad dressing
  • 1/2 teaspoon finely shredded lime peel or lemon peel
  • 1/4 teaspoon salt
  • 1 medium zucchini or yellow summer squash,* cut lengthwise into 1/4-inch-thick slices
  • 3 tablespoons Worcestershire sauce for chicken
  • 1 teaspoon olive oil
  • 4 small skinless, boneless chicken breast halves (1 to 1 1/4 pounds total)
  • 4 whole wheat hamburger buns, split and toasted
  • 1 medium tomato, thinly sliced
Instructions:
  • Prepare the zesty lime dressing by mixing together mayonnaise, lime zest, and salt in a bowl. Refrigerate until ready to serve.
  • Coat zucchini slices with a flavorful mixture of Worcestershire sauce and olive oil, then let them rest. Next, generously brush the chicken with the remaining Worcestershire sauce on all sides.
  • For a charcoal grill, position chicken over medium coals. Grill uncovered for 12-15 minutes until chicken juice runs clear at its thickest part (165°F), flipping halfway. Introduce zucchini slices for the final 6 minutes, turning once until softened and lightly browned. (For gas grill, preheat, reduce to medium, grill chicken, then zucchini as described.)
  • Spread lime dressing on toasted buns, then layer chicken, tomato slices, and zucchini (halved crosswise if desired) on bun bottoms before adding bun tops to serve.
  • Add a pop of color by incorporating half a medium zucchini and half a medium yellow summer squash.
