Spicy chicken skewers topped with maraschino cherry and pineapple.
Ingredients:
2tablespoons brown sugar
2tablespoons honey
1tablespoonlime juice
1tablespoonlemon juice
3tablespoons maraschino cherry juice
1teaspoongarlic powder
0.5 teaspoonground ginger
0.5 teaspoongroundblack pepper
0.5 teaspooncayenne pepper
0.25 cuppineapple juice
0.25 cupdry white wine
0.25 cuphot pepper sauce (such as Crystal®)
0.75 cupreduced-sodium soy sauce
1 (8 ounce) packagefresh mushrooms, stems removed
1 small red onion, cut into chunks
1red bell pepper, cut into 1 inch pieces
0.5 pintcherry tomatoes
4skinless, boneless chicken breast halves - cut into 1 inch pieces
16wooden skewers, soaked in water
16fresh pineapple chunks
16maraschino cherries, stemmed
Instructions:
In a large, non-metallic bowl, combine brown sugar, honey, lime juice, lemon juice, maraschino cherry juice, garlic powder, ginger, black pepper, cayenne pepper, pineapple juice, wine, hot pepper sauce, and soy sauce. Add mushrooms, onion, bell pepper, tomatoes, and chicken to the marinade. Cover and refrigerate for at least 1 hour.
Prepare the outdoor grill by heating it to medium heat and lightly oiling the grate.
Thread chicken, assorted veggies, pineapple slice, and maraschino cherry onto skewers. Mix and match veggies. Grill until chicken is cooked through and veggies are tender, approximately 10 minutes.
