Refreshing Polish pickled herring with yogurt dressing - ideal for summer parties.
Ingredients:
  • 8 pickled herring fillets
  • 1.25 cups plain low-fat yogurt
  • 1 onion, chopped
  • 1 pickled cucumber, diced
  • 1 tablespoon prepared yellow mustard
  • ground black pepper to taste
  • 1 pinch white sugar, or to taste
Instructions:
  • Dice herring fillets and place in a bowl. Stir in yogurt, onion, pickled cucumber, mustard, black pepper, and sugar until thoroughly mixed.
  • Refrigerate covered with plastic wrap for a minimum of 3 hours to enhance the flavors before serving.
