Indulge in rich slow cooker beef bourguignon with onions, red wine, carrots, thyme, and bay leaf for a flavor-packed stew of tender meat chunks.
Ingredients:
  • 3 tablespoons butter
  • 3 tablespoons vegetable oil
  • 2 pounds beef stew meat
  • 2 medium onions, quartered
  • 1 (750 milliliter) bottle red wine
  • 6 carrots, chopped into large chunks
  • 3 sprigs fresh thyme
  • 2 large bay leaves
Instructions:
  • In a large skillet over medium-high heat, melt butter with oil. Cook beef until all sides are browned, stirring occasionally, for 5 to 8 minutes. If needed, brown beef in batches to avoid overcrowding the pan, ensuring proper browning. Transfer browned beef to the slow cooker.
  • Sauté onions in the skillet until softened and slightly caramelized, about 3 to 5 minutes. Transfer them to the slow cooker.
  • Return the skillet to medium-high heat and pour in half of the wine. Simmer, scraping up any browned bits with a wooden spoon. Transfer to the slow cooker along with the remaining wine, carrots, thyme, bay leaves, salt, and pepper.
  • Slow cook for 6 to 8 hours on Low heat.
