Simple slow cooker chicken casserole with bacon, Tater Tots, and melted cheese.
Ingredients:
  • 4 ounces bacon, cut into 1-inch pieces
  • 1 pound skinless chicken breasts, cut into bite size pieces
  • salt and freshly ground black pepper to taste
  • 1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 1.5 cups grated Colby cheese
  • 1.5 slices grated Monterey Jack cheese
  • 0.75 cup milk
Instructions:
  • In a large skillet, crisp up the bacon pieces over medium-high heat, turning occasionally until perfectly browned, approximately 10 minutes. Drain the crispy bacon on paper towels and crumble once cooled.
  • Sprinkle chicken pieces with a delicate touch of salt and pepper.
  • Prepare the slow cooker by greasing the bottom with flavorful bacon grease. Layer half of the potato nuggets, followed by half of the crispy bacon bits. Combine Colby and Monterey Jack cheeses in a bowl and sprinkle one-third of the mixture over the layers. Arrange chicken in a single layer and top with half of the remaining cheese mixture. Sprinkle the rest of the bacon bits on top, followed by the remaining potato nuggets. Finish by sprinkling the rest of the cheese mixture and generously pouring milk over everything. Ready to cook!
  • Cook the chicken until thoroughly cooked and the cheese has melted, which should take 3 to 5 hours on High in a covered slow cooker.
