Creamy pesto and Parmesan chicken pasta cooked to perfection in a slow cooker.
Ingredients:
  • 2 pounds skinless, boneless chicken breasts
  • 2 cups chicken broth
  • 2 cups water, or as needed
  • salt and pepper to taste
  • 1 (8 ounce) jar pesto
  • 2 cups heavy whipping cream, divided
  • 1 (16 ounce) package egg noodles
  • 8 ounces grated Parmesan-Romano-Asiago cheese
  • 0.5 cup milk
Instructions:
  • Put the chicken in a slow cooker on High. Pour in enough broth and water to cover the chicken. Season generously with salt and pepper.
  • Cook the chicken until it is fully cooked through for about 3 hours with the pot covered.
  • Shred the chicken using a fork, then return it to the slow cooker. Stir in 1 cup of cream and the entire jar of pesto.
  • Continue cooking on High for an additional hour.
  • Combine the rest of the cream, egg noodles, and 3/4 of the grated cheese in the slow cooker along with the milk.
  • Cook on High for 1 more hour or until noodles are tender. Stir in extra milk for a creamier sauce. Sprinkle the remaining cheese on top before serving.
