Elevate pasta night with simple, cheesy one-pot cannelloni.
Ingredients:
  • 375g smooth ricotta
  • 150g sliced leg ham, finely chopped
  • 1 large vine-ripened tomato, finely chopped
  • 82.50 ml finely grated parmesan
  • 62.50 ml chopped fresh basil leaves
  • 1 small red chilli, finely chopped
  • 6 fresh lasagne sheets, each cut into 3 pieces
  • 500.00 ml passata
  • 375.00 ml grated 3 cheese blend
  • Fresh basil leaves, to serve
Instructions:
  • In a bowl, mix together ricotta, ham, tomato, parmesan, basil, and chili. Season generously with salt and pepper. Spread 2 tablespoons of the ricotta mixture along one long side of a lasagne sheet, then roll it up to seal in the filling. Repeat with the rest of the lasagne sheets and filling.
  • Start by elegantly drizzling 1 cup of passata over the base of your slow-cooker bowl. Next, layer the cannelloni in a beautiful arrangement, creating 2 layers. Drizzle the remaining passata over the top and generously sprinkle with a blend of cheese. Cover the slow-cooker and let it work its magic on HIGH for 2 hours, or until the pasta is perfectly tender and the cheese is irresistibly melted.
  • Allow the slow cooker to cool for 10 minutes. Serve garnished with additional basil leaves.
