Slow cooker Mediterranean lentil stew with potatoes, carrots, spinach, and aromatic spices.
Ingredients:
  • 5 cups water
  • 2.5 cubes vegetable bouillon, or more to taste
  • 2 cups dry lentils
  • 5 small carrots, peeled and diced
  • 2 medium potatoes, peeled and diced
  • 3 teaspoons ground cumin, or to taste
  • 1 teaspoon ground coriander
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 0.5 (6 ounce) can tomato paste, or to taste
  • 0.5 teaspoon sea salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 0.5 (8 ounce) package fresh spinach, torn
Instructions:
  • In a slow cooker set on High, combine vegetable bouillon with warm water until fully dissolved. Stir in lentils, carrots, and potatoes.
  • In a medium saucepan over medium heat, toast cumin and coriander until fragrant for about 20 seconds. Then add olive oil and onion, cooking for 2-3 minutes before adding garlic and sautéing for 30 seconds. Transfer the mixture to a slow cooker, then mix in tomato paste, salt, pepper, and spinach.
  • Cook over high heat, stirring occasionally, until lentils are tender and stew thickens, for 3 to 4 hours.
