Create a simple and delicious slow-cooked meal by combining chicken breasts, rice, salsa, and other flavors for a hassle-free dinner.
Ingredients:
  • 3 cups chicken broth
  • 1.5 cups converted long-grain white rice
  • 0.5 large white onion, sliced
  • 1 (24 ounce) jar salsa
  • 1 (4 ounce) can chopped green chilies
  • 1 (1 ounce) packet dry taco seasoning mix, divided
  • 2 skinless, boneless chicken breast halves
  • 1 (15 ounce) can black beans, drained
Instructions:
  • First, add the flavorful chicken stock to the slow cooker and mix in the rice, onion, salsa, green chilies, and half of the tasty taco seasoning. Next, generously coat the chicken breasts with the remaining taco seasoning and place them in the cooker. Finally, cover the cooker, set it to high, and let the magic happen.
  • Simmer the rice until it thickens and absorbs most of the liquid for 3 hours. Switch the cooker to the warm setting about 20 minutes before serving. Slice the chicken breasts, then mix them with black beans in the slow cooker. Cover and let the beans heat through before serving.
