Zesty Mexican pulled chicken slow-cooked with black beans, corn, salsa, peppers, and onions for a flavor-packed meal.
Ingredients:
  • 4 (5 ounce) frozen skinless, boneless chicken breasts
  • 1 (1 ounce) envelope taco seasoning mix
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (16 ounce) jar salsa
  • 1 (12 ounce) package frozen corn
  • 1 medium onion, thinly sliced
  • 1 large green bell pepper, julienned
  • 1 cup water
Instructions:
  • Layer the slow cooker with chicken, taco seasoning, black beans, salsa, corn, onion, bell pepper, and water in that exact order.
  • Slow cook until the chicken is cooked through and reaches an internal temperature of 165 degrees F (74 degrees C), which will take 6 to 8 hours.
  • Pull apart the tender chicken using two forks.
