Holiday sweet potato casserole with pecan topping made effortlessly in a slow cooker.
Ingredients:
  • cooking spray
  • 4 cups mashed sweet potatoes
  • 0.33333334326744 cup butter, melted
  • 3 tablespoons light brown sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon ground cardamom
  • 0.33333334326744 cup heavy whipping cream
  • 0.75 cup chopped pecans
  • 0.75 cup firmly packed light brown sugar
  • 0.25 cup all-purpose flour
  • 2 tablespoons butter, melted
Instructions:
  • Grease the 3-quart slow cooker with a light coat of cooking spray for easy cleanup and to prevent sticking.
  • In a large bowl, mix together potatoes, white sugar, 1/3 cup butter, 3 tablespoons brown sugar, eggs, vanilla extract, nutmeg, allspice, ginger, and cardamom until smooth using an electric mixer. Stir in whipping cream until well combined, then transfer the mixture to the slow cooker.
  • Mix together pecans, a generous amount of brown sugar, flour, and rich butter in a small bowl. Sprinkle this delightful topping over the sweet potato mixture.
  • Cook on High, covered, for 3 to 4 hours.
