Slow cooker Thai peanut chicken with creamy sauce, tender chicken, veggies, and noodles.
Ingredients:
  • 1.5 pounds boneless chicken breasts, cut into thin strips
  • 0.66666668653488 cup peanut butter
  • 0.5 cup chicken broth
  • 3 medium zucchini, diced
  • 2 medium red bell peppers, cut into thin strips
  • 0.33333334326744 cup soy sauce
  • 1 tablespoon bottled minced garlic
  • 1 teaspoon white sugar
  • 1 tablespoon lime juice
  • 0.5 tablespoon cornstarch, or more as needed
  • 0.5 tablespoon water, or more as needed
  • 1 (12 ounce) package linguine pasta
  • 1 tablespoon chopped peanuts
Instructions:
  • Add chicken, peanut butter, chicken broth, zucchini, bell peppers, soy sauce, garlic, and sugar in a slow cooker. Cook on High for 1 hour. Stir, then continue cooking until chicken is cooked and veggies are tender, about 2-3 more hours. Finish by stirring in lime juice.
  • For a thicker sauce, mix 1/2 tablespoon of cornstarch (use 1 full tablespoon for extra thin sauce) with water to make a paste. Stir the paste into the peanut butter sauce and cook until thickened. Adjust seasonings to taste.
  • Fill a large pot with salted water and bring to a rolling boil. Cook linguine for 8 minutes until tender but still firm. Drain and mix into the chicken and sauce. Top with peanuts before serving.
