Enjoy a cozy dish of tender, spiced corned beef, potatoes, and carrots in flavorful broth, perfect for any day of the year. Slow-cooker recipe requires just 20 minutes of prep for a melt-in-your-mouth meal, with leftovers ideal for a delicious Reuben sandwich the next day.
Ingredients:
  • 6 medium carrots, cut into 1-inch-thick slices (3 cups)
  • 4 medium potatoes, unpeeled, cut into 1-inch pieces (4 cups)
  • 1 large onion, cut into thin wedges
  • 1 corned beef brisket (2 to 2 1/2 lb)
  • 5 to 6 cups water
  • 1/4 teaspoon coarse ground black pepper
  • 6 whole cloves
  • 1 dried bay leaf
Instructions:
  • Combine carrots, potatoes, and onion in a 5- to 6-quart slow cooker.
  • If needed, trim corned beef brisket to fit in slow cooker and arrange over vegetables. Pour in enough water to cover. If brisket includes a spice packet, add contents from the packet and skip the pepper, cloves, and bay leaf. Otherwise, include pepper, cloves, and bay leaf.
  • Cover and simmer over a low heat for 10 to 12 hours.
  • Remove the aromatic bay leaf from the slow cooker and discard. Transfer the succulent brisket to a serving platter and slice thinly. Using a slotted spoon, transfer the tender vegetables to a serving bowl.
