Create a savory beef and potato stew with slow-cooked ground beef, canned corn, and beef broth for an effortless and delicious meal.
Ingredients:
  • 1 pound lean ground beef
  • 1 pinch garlic salt, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 2.5 cups water
  • 1 (14.25 ounce) can low-sodium beef broth
  • 1 (15.25 ounce) can yellow sweet corn
  • 10 small red potatoes, peeled and cut into cubes
  • 6 fresh jalapeno peppers, sliced into rings
  • 1 small white onion, chopped
  • 1 pinch onion powder, or to taste
  • ground black pepper to taste
Instructions:
  • In a skillet over medium heat, crumble ground beef and sprinkle with garlic salt and cayenne pepper. Brown the beef, breaking it into small pieces as you stir, for 5 to 7 minutes. Drain excess grease before proceeding.
  • In a slow cooker, mix water, beef broth, corn, potatoes, sliced jalapenos, onion, onion powder, and black pepper. Add drained ground beef. Cook on High for 3 1/2 to 4 hours, stirring occasionally, until potatoes are tender.
