Slow-Cooker Beefy Vegetable-Barley Soup

Savor flavorful slow cooker soup with minimal prep for a comforting meal.
Ingredients:
  • 1 1/2 lb beef stew meat
  • 1/2 cup frozen chopped onion (from 12-oz bag), thawed
  • 1/2 cup uncooked medium barley
  • 3 1/2 cups Progresso™ beef flavored broth (from 32-oz carton)
  • 1 cup water
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried marjoram leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups frozen mixed vegetables, thawed
Instructions:
  • If desired, dice the beef into bite-size pieces. Combine all ingredients in a 3- to 4-quart slow cooker, excluding the mixed vegetables.
  • Cover and simmer gently on low heat for 8 to 10 hours.
  • Add mixed vegetables to the mixture and turn the heat to High. Cover and cook for 20 to 30 minutes until vegetables are crisp-tender.
