Slow-Cooker Chicken and Vegetables with Dumplings

Create flavorful chicken and vegetable dumplings for a comforting meal.
Ingredients:
  • 2 1/2 to 3 pounds boneless skinless chicken thighs
  • 1 pound small red potatoes (about 2 1/2 inches in diameter)
  • 1 medium onion, coarsely chopped ( 3/4 cup)
  • 2 cups baby-cut carrots
  • 5 1/4 cups Progresso™ chicken broth (from two 32-ounce cartons)
  • 2 cups Original Bisquick™ mix
  • 1/2 cup water
  • 2 teaspoons parsley flakes
Instructions:
  • Add the chicken, potatoes, onion, and carrots to a 6-quart slow cooker, then pour in the broth.
  • Cook on low heat for 9 to 10 hours, covered.
  • Turn up the heat to high. Combine Bisquick mix, water, and parsley in a medium bowl. Use rounded tablespoonfuls to place the dough on top of the hot chicken mixture. Cover and cook for 45 to 50 minutes, or until the dumplings are dry in the center.
