Slow-Cooker Easy Chicken Alfredo

Quick and easy slow cooker Alfredo with roasted red peppers, mushrooms, chicken, broccoli, and fettuccine. Cooks in 6 hours on low, then top with Parmesan cheese for a delicious family meal.
Ingredients:
  • 1 1/4 lb. boneless skinless chicken thighs, cut into 3/4-inch pieces
  • 1 (4.5-oz.) jar sliced mushrooms, drained
  • 1/2 cup roasted red bell pepper strips (from a jar)
  • 2 tablespoons dry sherry, if desired
  • 1 (16-oz.) jar Alfredo sauce
  • 3 cups Frozen Broccoli Cuts
  • 10 oz. uncooked fettuccine
  • 2 tablespoons shredded fresh Parmesan cheese
Instructions:
  • In a 3 1/2 to 4-quart slow cooker, arrange chicken, mushrooms, and roasted pepper strips in layers. Drizzle with sherry, then pour Alfredo sauce evenly over the top.
  • Cover and simmer on low heat for 5 to 6 hours.
  • 25 minutes before serving, gently thaw broccoli in warm water, then add it to the chicken mixture. Increase the heat to high, cover, and cook for an additional 20 minutes. While the chicken cooks, prepare fettuccine according to package instructions and drain.
  • Combine the cooked fettuccine with the flavorful chicken mixture right before serving, and generously sprinkle with Parmesan cheese.
