Slow-Cooker Mediterranean Pot Roast

Flavorful Mediterranean dish with garlic, sun-dried tomatoes, and Kalamata olives.
Ingredients:
  • 1 boneless beef chuck roast (3 lb)
  • 1 teaspoon salt
  • 1 tablespoon Italian seasoning
  • 1 large garlic clove, finely chopped
  • 1/3 cup sun-dried tomatoes in oil, drained and chopped
  • 1/2 cup sliced pitted Kalamata or ripe olives
  • 1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 1/2 cup frozen pearl onions (from 1-lb bag)
Instructions:
  • Prepare a 12-inch skillet with cooking spray and heat it over medium-high heat. Sear the beef in the skillet for about 5 minutes, flipping it once, until it turns a delicious brown. Sprinkle with salt, Italian seasoning, and garlic, then remove from the skillet.
  • Place the seasoned beef in a 4-to 5-quart slow cooker with the seasoned side facing up. Top with tomatoes, olives, broth, and onions.
  • Slow cook on a low heat setting for 5 to 6 hours, or until the beef is tender.
  • Take out the beef from the slow cooker and allow it to rest covered for 15 minutes. Slice the beef, then serve it with the delicious beef juice and onions from the slow cooker. Please note that this recipe is specifically designed for slow cookers with heating elements in the side and bottom of the cooker, not for those with only a heated base. If using a slow cooker with just a heated base, refer to the manufacturer's guidelines for layering ingredients and setting the temperature.
