Slow-Cooker Spanish Chicken

Elevate your Spanish meal with a savory blend of slow-cooked chicken, sausage, and veggies.
Ingredients:
  • 1 3/4 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 lb turkey Italian sausages, cut into 1-inch pieces
  • 1 large red bell pepper, chopped (1 1/2 cups)
  • 1 large onion, chopped (1 cup)
  • 1 teaspoon dried oregano leaves
  • 1/2 to 1 teaspoon crushed red pepper
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (6 oz) tomato paste
  • 1 can (14 oz) artichoke heart quarters, drained
  • 1 can (4 oz) sliced ripe olives, drained
  • 3 cups hot cooked rice
Instructions:
  • Combine all ingredients in a 3 1/2- to 4-quart slow cooker, excluding the artichoke hearts, olives, and rice.
  • Simmer gently, covered, for 6 to 8 hours on Low heat.
  • Combine the artichoke hearts and olives into the mixture and gently warm. Serve alongside fluffy rice.
