Slow-Cooker Spiced Lamb Tagine

Transport your taste buds to Africa with a fragrant slow-cooked lamb tagine infused with savory Progresso® chicken broth.
Ingredients:
  • 2 lb lamb or beef stew meat, cut into 1 1/2-inch cubes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 3/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 1/2 cups coarsely chopped onions
  • 1 cup pitted dried plums
  • 1/4 cup honey
  • 2 tablespoons tomato paste
  • 3 medium carrots, cut diagonally into 1-inch slices
  • Fresh cilantro leaves, if desired
  • Toasted sliced almonds, if desired
Instructions:
  • Prepare the slow cooker by spraying it with cooking spray. Season the lamb with 1/2 teaspoon of cumin, turmeric, and salt. In a large skillet, heat oil over medium-high heat. Cook half of the lamb for 6 minutes until browned on all sides, then transfer to the slow cooker with a slotted spoon. Repeat with the remaining lamb.
  • Pour off any excess drippings from the skillet, keeping the flavorful brown bits at the bottom. Pour in 1/2 cup of broth and stir to deglaze the skillet for 1 minute. Transfer everything to the slow cooker and add the remaining 1/2 teaspoon cumin, 1 cup broth, onions, plums, honey, tomato paste, and carrots.
  • Cover the pot and let the lamb cook on a Low heat setting for 8 hours or until it becomes tender. Before serving, garnish each portion with fresh cilantro and almonds.
