Juicy roast lamb for easy, delicious meals all week long.
Ingredients:
  • 1.5kg lamb shoulder (bone in)
  • 2 garlic cloves, quartered
Instructions:
  • Preheat your oven to 160C/140C fan-forced. Cut 8 slits into the top of the lamb with a sharp knife, and then insert pieces of garlic into each slit.
  • Place lamb in roasting pan and add 1 cup of cold water. Drizzle with oil and season with salt and pepper. Roast uncovered for 1 hour and 30 minutes, then cover with foil and roast for an additional 2 hours until tender. Allow the lamb to cool before serving.
  • Remove the bone from the lamb, shred the meat, and divide it in half. Place the shredded meat into snap-lock bags and refrigerate until ready to use.
