Roasted plum tomatoes with caramelized onions and garlic for a rich and savory side or appetizer.
Ingredients:
  • 0.5 onion, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 6 plum tomatoes, halved lengthwise and seeded
  • 0.25 cup olive oil
  • 1 teaspoon white sugar
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 275°F (135°C) to create the perfect cooking environment.
  • Combine onion, garlic, rosemary, thyme, parsley, and basil in an 8-inch square baking pan; spread evenly across the bottom. Place tomatoes, cut-side down, on top of the herb mixture. Drizzle with olive oil, sprinkle with sugar, and season with salt and pepper.
  • Roast the tomatoes in the preheated oven until they have started to collapse and brown around the edges, approximately 2 1/2 hours.
