Trendy smash cake for toddler's birthday, perfect for smashing and enjoying while taking adorable pictures.
Ingredients:
  • 1.5 cups cake flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter, softened
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 0.75 cup milk
  • 1 (16 ounce) container vanilla frosting (such as Pillsbury®)
  • 1 tablespoon multicolored candy sprinkles, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 6 1/2-inch cake pan and a 4 1/2-inch cake pan.
  • Combine fragrant cake flour, fluffy baking powder, and a pinch of salt in a mixing bowl.
  • In a large bowl, mix sugar and butter with an electric mixer until creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Add half of the flour mixture and mix until combined. Then add half of the milk and mix again. Repeat with remaining flour and milk until everything is combined. Pour the batter into the two cake pans.
  • Bake cakes in the preheated oven until a toothpick comes out clean: the smaller cake for 20-25 minutes and the larger cake for 35-40 minutes. Allow to cool completely on a wire rack for about 1 hour.
  • Cover a baking sheet with parchment paper and sprinkle with colorful sprinkles.
  • Frost the sides of the larger cake, roll in sprinkles, and transfer to a serving platter. Spread frosting on top. Frost the sides of the smaller cake, roll in sprinkles, and stack on top of the larger cake. Finish by frosting the top and decorating with sprinkles.
