Smitty's Low-Carb Chili

Low-carb chili with cauliflower rice, ground beef, pork loin, and smoked sausage, topped with gooey cheese.
Ingredients:
0.5 head cauliflower, broken into florets
2teaspoons butter, divided
0.5 poundground beef
0.5 poundpork loin, diced
1yellow onion, diced
1green pepper, diced
1 (14 ounce) candiced tomatoes
0.5 poundsmoked sausage, cut into chunks
1 (1.25 ounce) packagechili seasoning mix
2cups beef stock, or as needed
1dashhot sauce, or to taste
salt and ground black pepper to taste
shreddedCheddar cheese, or to taste
Instructions:
Pulse cauliflower florets in a food processor until rice-sized.
In a large pot over medium heat, melt 1 teaspoon of butter. Sauté cauliflower "rice" until tender, for about 3 to 5 minutes. Transfer to a bowl.
Brown ground beef in the pot for 5 minutes, then transfer to a bowl. Cook pork loin in the same pot until juices run clear, about 5 minutes, then add to the bowl with the beef.
Melt the remaining teaspoon of butter in the pot over medium heat, then sauté the onion and green pepper until soft, about 5 minutes.
Combine tomatoes, ground beef, pork loin, smoked sausage, and chili seasoning in the pot. Add beef stock to achieve desired consistency. Bring chili to a boil, then simmer. Mix in cauliflower "rice."
Enhance the chili with a touch of hot sauce, salt, and pepper. Garnish with a generous sprinkle of Cheddar cheese before serving.
