Indulge in a tasty, low-fat smoked chicken salad for a hassle-free dinner tonight.
Ingredients:
  • 300g dried wholemeal spaghetti pasta
  • 9.20 gm olive oil
  • 6 shallots, pale section only, thinly sliced
  • 2 long fresh red chillies, halved, deseeded, finely chopped
  • 400g broccoli, cut into small florets
  • 200g smoked chicken breast, skin removed, coarsely shredded
  • 60g (1/4 cup) 97% fat-free semi-dried tomatoes, chopped
  • 40.00 ml pitted kalamata olives in brine, halved, thinly sliced lengthways
  • 62.50 ml chopped fresh continental parsley
Instructions:
  • Boil pasta in a pot of salted water according to package instructions until al dente. Save 60ml (1/4 cup) of the cooking water before draining.
  • In a large non-stick frying pan over medium-high heat, warm the oil. Toss in the shallot, garlic, and chili, and cook while stirring for 1 minute.
  • Combine the broccoli with the shallot mixture. Sauté for 2-3 minutes, stirring occasionally, until the broccoli is vibrant green and crisp-tender.
  • Combine the chicken, tomato, and olive with the broccoli mixture. Sauté, stirring occasionally, for 1-2 minutes until everything is heated through.
  • Combine the broccoli mixture, parsley, and a splash of reserved cooking liquid with the pasta, toss thoroughly. Season generously with pepper and serve in individual bowls.
