Smoked cod and dill rice

Delicious smoked cod and rice dish packed with omega-3s.
Ingredients:
  • 1 brown onion, finely chopped
  • 300.00 gm Basmati rice, rinsed
  • 637.50 gm reduced-salt fish stock
  • 500g smoked cod
  • 40.00 ml dill, finely chopped
  • 21.00 gm lemon juice
Instructions:
  • In a large heavy-based saucepan, heat oil over medium heat. Add onion and garlic, cook until soft, about 5 minutes. Increase heat to high, stir in rice and cook for 1 minute until lightly toasted.
  • Add the stock and bring it to a boil. Lower the heat, cover, and simmer for 10 minutes.
  • Place the fish in a saucepan and cover with water. Simmer gently over low heat for 5 to 10 minutes until cooked through. Transfer the fish to a plate using a large slotted spoon. Remove the skin and bones, then use a fork to flake the fish.
  • Take the rice off the heat, then layer the fish over the rice, cover it, and let it rest for 10 minutes. Sprinkle with dill and lemon juice, gently mix until just incorporated, season with salt and pepper, and serve.
