Ingredients:
  • 200g smoked salmon slices, torn into large pieces
  • 1 leek, thinly sliced
  • 2 tsp lemon thyme leaves
  • 30.00 ml salted capers, rinsed and drained
  • 58.75 gm sour cream
  • 400g penne rigate
Instructions:
  • Prepare the penne by cooking it in a generously salted pot of boiling water until it reaches the perfect al dente texture as per the package directions.
  • Heat a splash of olive oil in a non-stick frying pan over high heat. Add capers and cook until they're crispy and golden brown, about 2-3 minutes. Remove pan from heat, leaving the oil in the pan.
  • Lower the heat to medium, then sauté the leek for 4-5 minutes, stirring often to avoid browning. Mix in the lemon thyme, cook for another minute, then take off the heat.
  • After draining the penne, return it to the pan and mix in the cooked leeks, smoked salmon, salt, pepper, and sour cream. Garnish with capers and fresh sprigs of thyme before serving.
