Smokey sausage, egg, broccoli, and cauliflower rice combine for a quick and satisfying weeknight dinner.
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 1 (12 ounce) package Hillshire Farm® Rope Smoked Sausage, cut into 1/2" coins
  • 4 cups small broccoli florets
  • 1 medium red bell pepper, cut into strips
  • 2 large eggs, lightly beaten
  • 1 (12 ounce) package frozen riced cauliflower
  • 0.25 cup reduced-sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 0.5 teaspoon granulated sugar
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped cilantro
Instructions:
  • In a large nonstick skillet over medium-high heat, heat 1 tablespoon of oil. Add sausage and cook for about 3 minutes, stirring occasionally, until lightly browned. Then, add broccoli and bell pepper. Cook, stirring occasionally, until broccoli is bright green and slightly tender, about 5 to 6 minutes. Transfer the mixture to a plate.
  • Wipe skillet clean, reduce heat to medium, and add 1 tablespoon oil. Pour in eggs and cook, stirring occasionally, until set, about 2 to 3 minutes. Transfer to cutting board and chop into 1/2-inch pieces.
  • Heat the skillet over medium-high heat and pour in the remaining 1 tablespoon of oil. Add the cauliflower to the skillet and let it cook without stirring until softened and lightly toasted, approximately 4 minutes. Remove from heat.
  • Combine soy sauce, sesame oil, sugar, pepper, sausage mixture, and egg. Serve equally on plates and garnish with fresh cilantro.
