Smoked trout, asparagus and noodle soup

Spicy Japanese-inspired soup, bursting with bold flavors and packed with nutrients.
Ingredients:
  • 200g pre-sliced smoked trout, shredded
  • 20.00 ml wasabi paste, optional
  • 75.00 gm white miso paste
  • 510.00 gm fish stock
  • 1500.00 gm water
  • 5cm piece fresh ginger, thinly sliced
  • 1 bunch asparagus, trimmed, cut into thirds
  • 350g packet fresh udon noodles
Instructions:
  • Separate the trout among 4 plates and add a small dollop of wasabi paste to each plate. Cover and refrigerate until ready to serve.
  • In a saucepan, gently heat up miso, stock, water, and ginger until the miso dissolves, stirring constantly. Enjoy the savory aroma as it comes to a gentle boil.
  • Combine asparagus and noodles with sauce in a saucepan. Simmer for 3 minutes until asparagus is bright green and noodles are tender. Serve soup in bowls alongside trout and wasabi paste.
