Smoky eggplant puree

Boost comfort with a luxurious puree.
Ingredients:
  • 3 (about1.2kg) eggplants
  • 9.00 gm tahini
  • 31.50 gm lemon juice
  • 27.30 gm extra virgin olive oil
Instructions:
  • Preheat a barbecue or chargrill pan to medium-high heat. Grill eggplants, turning occasionally, until charred and tender, about 30-35 minutes. Allow the grilled eggplants to cool and drain by placing them in a colander for 30 minutes.
  • Remove eggplant flesh from the skin and discard the skin. Blend the eggplant flesh with tahini, lemon juice, and extra virgin olive oil until creamy. Season to taste. Enjoy with lamb.
