Snapper with apple and cabbage

Ginger-infused snapper with sweet apple for a flavorful, nutritious dish.
Ingredients:
  • 1 large red onion, halved, sliced
  • 2cm piece ginger, peeled, grated
  • 1/4 red cabbage, shredded
  • 2 gala apples, cored, sliced into rounds
  • 1/2 lemon, juiced
  • 40g butter, chopped
  • 4 snapper fillets
Instructions:
  • In a large saucepan over medium heat, heat 1 tablespoon of oil. Add the onion and cook while stirring for 2 to 3 minutes until soft. Then, add ginger and garlic, and continue to cook for 1 minute until aromatic.
  • Combine cabbage, apple, and 2 tablespoons of fresh lemon juice in a pan. Cook covered, stirring occasionally, for 15 minutes until the cabbage is wilted and the apples are tender. Mix in half of the butter and season with salt and pepper.
  • In a large frying pan over medium-high heat, heat the remaining oil and butter until it becomes frothy. Season the fish with salt and pepper and cook for 2 minutes on each side or until cooked through. Serve the fish with apple and cabbage.
