Socca pancakes with broccoli & cheese

Ingredients:
  • 160 g gram (chickpea) flour
  • olive oil
  • 2 onions
  • 2 cloves of garlic
  • 220 g broccoli
  • 1 lemon
  • 100 g goat’s cheese
  • 50 g Parmesan cheese
  • 1 bunch of fresh flat-leaf parsley
Instructions:
  • Combine flour, 2 tbsp oil, 200ml water, and a pinch of sea salt in a bowl. Let it rest for 15 minutes. Meanwhile, slice onions and garlic. Cut broccoli into 3cm pieces. In a large pan, heat 2 tbsp oil and sauté onions until browned. Add broccoli and garlic, cook until tender. Mix in lemon zest and juice. In a non-stick pan, cook pancake batter in batches. Top pancakes with broccoli, goat’s cheese, Parmesan, and parsley to serve.
