Funfetti sugar cookies with vibrant sprinkles and a delicious frosting topping, perfect for any celebration!
Ingredients:
  • 1 cup white sugar
  • 0.5 cup Greek yogurt
  • 1.5 cups all-purpose flour
  • 1.5 cups white whole wheat flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.66666668653488 cup sprinkles
  • 3 cups confectioners' sugar
  • 1 teaspoon heavy cream, or as needed
  • 0.5 cup sprinkles
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets with parchment paper.
  • In the bowl of a stand mixer, cream together sugar and butter until light and fluffy. Mix in Greek yogurt, eggs, and vanilla extract. Add all-purpose flour, whole wheat flour, baking powder, and baking soda; combine well. Gently fold in sprinkles.
  • Use a cookie scoop to portion the dough into equal amounts and form into balls. Place them on the baking sheets and gently flatten them with your hand or a glass.
  • Bake in the preheated oven until edges are lightly golden, 10 to 12 minutes. Place on a cooling rack and continue with the rest of the dough. Let cookies cool completely, about 15 minutes.
  • Prepare the frosting while the cookies cool. Cream butter, then blend in confectioners' sugar before adding vanilla extract. Adjust consistency by adding cream if desired.
  • Frost cookies generously with a knife and sprinkle with extra sprinkles for a delightful finish.
